Cauliflower Stir Fry
Medium sized saute pan about 8 inches
1 tbsp olive oil
1 tsp garlic clove minced
1 tsp fresh ginger
½ cup raw scallions
12 oz bag organic riced cauliflower fresh or frozen
½ tsp of grated lemon rind
½ lemon squeezed
1 tbsp coconut aminos
½ cup peas fresh or frozen
Himalayan sea salt and ground rainbow peppercorn to taste
- Start by heating your pan over medium-high heat then add the olive oil. Let the oil heat up, about 30 seconds.
- Once the oil is heated add the garlic. Sauté the garlic for about 30 seconds or until slightly golden.
- Stir in the ginger and scallions and mix for about 15 seconds.
- Add the cauliflower to the pan. Sauté that for about 5 minutes.
- Sprinkle in the lemon zest, the lemon juice and the coconut aminos and toss until well combined.
- Stir in the peas and remove from heat.
- Add salt and pepper to taste.
